Vegan Vanilla and Berry High Calcium Bircher Muesli Serves 1 Ingredients: 1/3 cup oats (can use gluten free oats if you want this recipe to be gluten free) 1/2 cup coconut yoghurt (no added sugar) 1/2 cup mixed berries (I used frozen raspberries and blueberries) 6 AlgaeCal Plus (simply open the capsules and pour powder into yoghurt) 1/2 tsp vanilla essence 1/2 tsp cinnamon Optional nutritional and flavour boosters: 1 tbsp plant based vanilla protein powder 1 tsp vitafiber powdered prebiotic fibre 1 tsp natural sweetener of choice (I used a sugar free erythritol and stevia mix) Toppings: 1 tbsp natural almond butter (or nut butter of choice) 2 tbsp mixed berries 1 tsp slivered almonds Method: Pour yoghurt, vanilla, cinnamon, AlgaeCal (plus any of the optional boosters) into a bowl and mix thoroughly. Add in oats and stir through yoghurt. Add in mixed berries and stir through until oats, berries, and yoghurt mix are all consistently mixed. Place in fridge for a few hours or overnight. Mix the next morning (you can add a little more yoghurt, or a milk of your choice (e.g coconut or almond milk) if it has become too thick). Add additional toppers if desired. Enjoy!
