Hi everyone,

I thought I would share with you all today a super simple healthy breakfast burrito recipe for those days that you feel like mixing things up at home!

It is definitely not your traditional breakfast burrito, but it tastes delicious, is packed with nourishing ingredients and will impress your dining guests if you make it for others!

Packed with protein, fibre, healthy fats, antioxidants, polyphenols, fat soluble vitamins, iodine and more, this will make you glow you from the inside out, and keep you satisfied for hours!

Healthy breakfast burrito recipe


Makes 1 (just increase the proportions accordingly if you are making up the fish for more people)



1 nori sheet

1/2 tomato, diced

1/3 carrot, thinly sliced or grated into ribbons

1/8 red onion, thinly sliced

1/4  avocado, diced or sliced

7 broccoli spears, cooked

2 eggs

Dash of water

1 tsp garlic infused Extra Virgin Olive Oil (can use a couple cloves of garlic and regular EVOO)


Flavouring components:

Truffle oil infusion spray

Garlic infusion spray (can just cook with a couple extra cloves of garlic if you don’t have this)

Lemon infusion spray (or a squeeze of fresh lemon)

Cracked pepper

Sea salt



  1. Prepare all vegetables and place nori sheet on a serving plate
  2. Mix eggs with a dash of water, cracked pepper and sea salt in a bowl
  3. Heat EVOO in non-stick pan and add red onion, and then the carrot, cook for a minute
  4. Pour egg mixture over red onion and carrots and heat until cooked through, flip, and cook for a further few seconds so that your omelette is ready; place on a separate plate.
  5. Cook tomato in pan and season with cracked pepper

To serve:

  1. Line broccoli down one side of the nori sheet, leaving enough room to the outer side to be able to roll the sheet at the end
  2. Place diced avocado and spray with lemon alongside broccoli
  3. Slice omelette in half and place one piece on top of the other alongside the avocado, spray with truffle oil
  4. Place cooked tomato alongside omelette
  5. Either leave open and eat with a knife and fork, or roll it up and enjoy it in true healthy burrito style!
