High Protein Choc Chip Banana Muffin

Hi everyone,

I decided to get my bake on and concoct some super moist yet fluffy high protein choc chip banana muffins!

I managed to randomly make them fit with the following nutritional criteria:

  • No added sugar
  • Gluten free
  • Grain free
  • Low glycemic index
  • Antioxidant rich
  • Prebiotic fibre rich

So I bring to you, Travelling Dietitians High Protein Choc Chip Banana Muffins

Ingredients:

Wet:

2 ripe bananas, mashed

1/4 cup milk (I used full cream, but you could probably switch for coconut milk if wanting a dairy free option)

2 tbsp melted Isowhey coconut oil

1 egg (you could try replace this with a chia egg if wanting to remove the egg)

 

Dry:

30g scoop MRM vanilla plant based protein powder (contains an antioxidant rich mix inside it)

1/4 cup Vitafiber prebiotic powdered sweetener from Bioneutra (Aussies – until this product is available to be shipped to Australia I would substitute this for a granulated sweetener such as xylitol, erythritol/stevia mix or monk fruit extract)

1/4 cup Jimmy Blacks black bean powder

1/4 cup coconut flour

1 heaped teaspoon herbies spices cinnamon

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp xanthum gum

 

Mix ins: 

2 tbsp Well Naturally sugar free dark chocolate melts

Optional add in – Desiccated coconut

Method:

  1. Preheat oven to 180 degrees celsius
  2. Mix all dry ingredients together in a high speed blender (I used my vitamix)
  3. Add in all wet ingredients and blend until a thick smooth batter is formed
  4. Turn off blender and stir through chocolate chips
  5. Spray with EVOO or coconut oil a regular 12 muffin pan
  6. Spoon mixture evenly into muffin tray
  7. Place in oven for approximately 12 minutes or until skewer comes out clean
  8. Allow to cool for 10 minutes before removing muffins from the tray
  9. Enjoy!
