No Added Sugar High Protein Banana Cake with Vanilla Cinnamon Probiotic Icing

Hi everyone,

I seem to have been getting more creative in my kitchen over the last couple of months, as I continue to discover the delicate art to mixing a range of high protein and high fibre grain replacements into my recipes.

In all my recipes I stick with using grain alternatives that are:

  • Low glycemic load
  • High in protein and/or
  • High in dietary fibre

I do this to ensure that the final baked good is truly nutrient dense, and continues to align with all my nutritional philosophies.

Some of my new favourites are Lupin Flakes and Black Bean Powder, alongside natural protein powders that are enhanced with either reds and greens powders for an extra anti-oxidant kick, or digestive enzymes to assist with the breakdown in our bodies.

I also make sure that my recipes fit within as many of the following criteria (if not all):

  • No added sugar
  • Probiotic enhanced
  • Prebiotic enhanced
  • Antioxidant packed
  • High protein
  • High fibre
  • Nourishing fat and fat soluble vitamin providing (this can range from offering either omega 3’s, monounsaturated fats, or natural saturated fats which can aid with satiety).

So today I bring to you my:

No added sugar high protein banana cake with vanilla cinnamon probiotic icing

High protein banana cake

Makes – 1 loaf

(I made the cake half vanilla, half banana, but honestly the banana layer was better, so I’m going to stick with the recipe for you to simply make the whole cake as the banana version!)

 

High Protein Banana Cake Ingredients:

1/2 cup Lupin Foods – lupin flakes

1/2 cup Jimmy Blacks – black bean powder

1.5 cups MRM vanilla plant based protein powder

1 tsp baking powder

3/4 tsp xanthum gum

1 tsp Herbies cinnamon

2 eggs

2 tbsp Isowhey coconut oil

1/3 cup prebiotic fibre VitaFiber powdered sweetener (use another natural granulated sugar free sweetener if you are unable to access this ingredient)

2 bananas, mashed

1 cup Babushka natural kefir

 

Probiotic Vanilla Cinnamon Icing Ingredients:

2 scoops MRM vanilla plant based protein powder

1/2 tsp cinnamon

1/2 tsp xanthum gum

2 tsp Isowhey coconut oil

4 tbsp Babushka natural kefir

1/3 cup powdered prebiotic vitafiber fibre sweetener

2 tbsp liquid prebiotic vitafiber fibre sweetener

 

Method:

  1. Mix all dry cake ingredients in a high speed blender, and then add in all the wet cake ingredients and mix until a smooth paste has been formed.
  2. Cover baking loaf tin with either a small amount of coconut oil, extra virgin olive oil, or baking paper.
  3. Spoon mixture evenly into tray and place in a preheated 180 degrees oven for around 50 minutes or until a skewer comes out clean (note – you may need to cover the tin with foil if the top is browning too fast).
  4. Mix all icing ingredients in a high speed blender until a creamy smooth paste is created.
  5. Once cake has been taken out of the oven and cooled, spread icing evenly over the top of the cake.
  6. Enjoy!

So there you have it, its really quite easy to make once you have your hands on all the different ingredients. I promise you, you won’t regret bringing these nutrient dense products into your life.

You will feel really full and satisfied from a piece of this, and the only problem will be stopping yourself from demolishing it all at once!
