Recipe: Vegan vanilla and berry high calcium bircher muesli

Hi everyone,

With my love for creating super nutrient dense delicious recipes, I was approached by a wonderful company, AlgaeCal to partner with them on the creation of a bircher muesli for you all that not only fits a plant based lifestyle, but that also provides 100% of your Recommended Daily Intake / Dietary Intake RDI/RDA (depending on which country you are in!) of calcium, and of course, tastes delicious!

I have been a huge fan of calcium supplements that are naturally derived from algae for years, they are tasteless, odourless, provide an abundance of bone strengthening nutrients rather than being isolated vitamins and minerals that you find in many mainstream supplements, and they are highly absorbable.

AlgeCal plant calcium is certified organic, nonGMO, and gluten, dairy and soy free for anyone that desires this.

I used the AlgaeCal Plus product in my recipe which provides a super absorbable calcium, magnesium, 70 trace minerals from AlgaeCal marine algae; and amazingly, offers a full clinical dose of vitamins D3 and K2, and added along with additional magnesium and boron.

I simply opened up the tablets so that I could use the powder from inside!

Serves 1

Ingredients:

  • 1/3 cup oats (can use gluten free oats if you want this recipe to be gluten free)
  • 1/2 cup coconut yoghurt (no added sugar)
  • 1/2 cup mixed berries (I used frozen raspberries and blueberries)
  • 6 AlgaeCal Plus (simply open the capsules and pour powder into yoghurt)
  • 1/2 tsp vanilla essence
  • 1/2 tsp cinnamon

Optional nutritional and flavour boosters:

  • 1 tbsp plant based vanilla protein powder
  • 1 tsp vitafiber powdered prebiotic fibre
  • 1 tsp natural sweetener of choice (I used a sugar free erythritol and stevia mix)

Toppings:

  • 1 tbsp natural almond butter (or nut butter of choice)
  • 2 tbsp mixed berries
  • 1 tsp slivered almonds

Method:

  1. Pour yoghurt, vanilla, cinnamon, AlgaeCal (plus any of the optional boosters) into a bowl and mix thoroughly.
  2. Add in oats and stir through yoghurt.
  3. Add in mixed berries and stir through until oats, berries, and yoghurt mix are all consistently mixed.
  4. Place in fridge for a few hours or overnight.
  5. Mix the next morning (you can add a little more yoghurt, or a milk of your choice (e.g coconut or almond milk) if it has become too thick).
  6. Add additional toppers if desired.
  7. Enjoy!
